Ingredients

  • 8 oz cream cheese, softened and cubed
  • 4 tbsp butter
  • 1/3 cup milk
  • 1/2 tsp salt
  • black pepper, to taste
  • 18 oz frozen sweet corn, thawed
  • pickled jalapeños, diced (optional)
  • 1 cup sharp cheddar cheese, shredded

Instructions

  • Preheat the oven to 350°F. In a saucepan over low heat, melt the cream cheese and butter together, stirring gently.
  • Stir in the milk, salt, and black pepper until the sauce becomes smooth.
  • Add the thawed corn and jalapeños if using. Stir until evenly coated.
  • Transfer the mixture to a greased 8×8-inch or 2-quart baking dish. Top with shredded cheddar cheese.
  • Bake for 20 minutes until the cheese is melted and bubbly. Serve warm.

Notes

Add jalapeños for heat or omit them for a mild version. Serve warm for best texture.
