Instructions

  • Score each slice of bologna with small slits or an X to prevent curling during cooking.
  • Heat a skillet over medium-high heat and add oil or butter.
  • Fry the bologna slices for 2–4 minutes per side until browned and slightly crispy at the edges.
  • Toast the bread lightly if desired.
  • Spread mayonnaise and mustard on the bread, add fried bologna, cheese if using, and any toppings.
  • Top with the second slice of bread, press lightly, and serve warm.
