Instructions
Score each slice of bologna with small slits or an X to prevent curling during cooking.
Heat a skillet over medium-high heat and add oil or butter.
Fry the bologna slices for 2–4 minutes per side until browned and slightly crispy at the edges.
Toast the bread lightly if desired.
Spread mayonnaise and mustard on the bread, add fried bologna, cheese if using, and any toppings.
Top with the second slice of bread, press lightly, and serve warm.
Notes
