Instructions
Chill two glasses in the freezer for 5–10 minutes.
Remove glasses and fill each halfway with ice.
Pour ½ cup pomegranate juice into each glass.
Add bourbon evenly between the glasses.
Slowly pour in ginger ale to combine.
Top each glass with 2 scoops of vanilla ice cream.
Garnish with pomegranate arils and mint, if desired, and serve immediately.
Notes
Serve immediately for best texture and flavor.
