Ingredients

  • 1 cup chilled pomegranate juice
  • 0.75 oz bourbon
  • 1 cup ginger ale, well chilled
  • 4 scoops vanilla ice cream
  • 1.5 cups ice cubes
  • pomegranate arils (optional garnish)
  • fresh mint sprigs (optional garnish)

Instructions

  • Chill two glasses in the freezer for 5–10 minutes.
  • Remove glasses and fill each halfway with ice.
  • Pour ½ cup pomegranate juice into each glass.
  • Add bourbon evenly between the glasses.
  • Slowly pour in ginger ale to combine.
  • Top each glass with 2 scoops of vanilla ice cream.
  • Garnish with pomegranate arils and mint, if desired, and serve immediately.
