Ingredients

  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 oz package taco seasoning
  • 1/2 cup water or beef broth
  • 14.5 oz can tomatoes with green chiles, drained
  • 15 oz can black beans, drained and rinsed
  • 3/4 cup sour cream
  • 9 oz bag Cool Ranch Doritos
  • 3 1/2 cups shredded Mexican blend cheese
  • Sour cream and salsa for topping

Instructions

  • Preheat oven to 350°F and grease a 9x13-inch baking dish.
  • Cook ground beef in a skillet until browned. Drain excess grease.
  • Add onion and bell pepper and cook 3–4 minutes.
  • Stir in taco seasoning and water or broth. Simmer 5–6 minutes.
  • Add tomatoes, black beans, and sour cream. Remove from heat.
  • Crush 1 cup Doritos and spread in bottom of dish.
  • Layer half the beef mixture, more crushed chips, and half the cheese.
  • Add remaining beef mixture, chips, and cheese.
  • Bake 25–30 minutes until bubbling.
  • Serve with sour cream, salsa, and toppings.

Notes

Top with sour cream, salsa, green onions, or hot sauce for serving.
