Ingredients

  • 6 slices bacon, cooked and finely chopped
  • 1 cup shredded cheese
  • 1 cup mashed potatoes, cold
  • 2 tbsp all-purpose flour
  • 1 egg
  • salt
  • black pepper
  • 1/2 cup all-purpose flour for coating
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • vegetable oil for frying

Instructions

  • Combine mashed potatoes, bacon, cheese, flour, egg, salt, and pepper in a bowl until mixed.
  • Shape the mixture into small cylinders or balls.
  • Roll each croquette in flour, dip in egg, and coat with breadcrumbs.
  • Heat oil to 350°F and fry croquettes for 2–3 minutes until golden.
  • Drain on paper towels and serve hot.

Notes

Use cold mashed potatoes for best texture. Fry in small batches to keep the oil temperature steady.
