vegetable oil for frying
Instructions
Combine mashed potatoes, bacon, cheese, flour, egg, salt, and pepper in a bowl until mixed.
Shape the mixture into small cylinders or balls.
Roll each croquette in flour, dip in egg, and coat with breadcrumbs.
Heat oil to 350°F and fry croquettes for 2–3 minutes until golden.
Drain on paper towels and serve hot.
Notes
Use cold mashed potatoes for best texture. Fry in small batches to keep the oil temperature steady.
