Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 box stuffing mix (6 oz)
  • 2 cans cream of chicken soup (10.5 oz each)
  • 1.5 cups low-sodium chicken broth
  • 0.5 tsp garlic powder
  • 0.25 tsp dried thyme
  • salt and black pepper, to taste
  • fresh parsley, optional garnish

Instructions

  • Preheat oven to 375°F. Place foil trays or baking dish on a rimmed baking sheet.
  • Pat chicken dry, cut into even pieces, season lightly, and arrange in a single layer.
  • Whisk soup, broth, garlic powder, and thyme. Pour sauce evenly over chicken.
  • Lightly moisten stuffing with hot broth and sprinkle evenly over chicken.
  • Cover tightly with foil and bake 25 minutes. Uncover and bake 15–20 minutes until chicken reaches 165°F and stuffing is golden.
  • Rest 5 minutes, garnish with parsley, and serve warm.

Notes

Dry the chicken well before assembling. Moisten stuffing lightly to avoid mushiness. Use full-fat soup for best flavor.
