Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups minute rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water
  • 1 tbsp butter
  • 1 envelope onion soup mix

Instructions

  • Preheat oven to 350°F and lightly grease a 9x13-inch baking dish.
  • Spread the rice evenly in the dish. Whisk together both soups and the water, then pour over the rice.
  • Place the chicken breasts on top of the rice mixture.
  • Sprinkle the onion soup mix evenly over the chicken and dot with butter.
  • Cover tightly with foil and bake for 1 hour without uncovering.
  • Remove from oven, let rest 5 minutes, then serve hot.

Notes

Do not uncover during baking to ensure the rice cooks properly. Let rest briefly before serving.
