Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberry puree or preserves

Instructions

  • Preheat oven to 350°F and grease a 9x5-inch loaf pan.
  • Whisk flour, baking powder, baking soda, and salt together in a bowl.
  • Cream butter and sugar until light. Add eggs one at a time, then vanilla.
  • Alternate adding dry ingredients and buttermilk, mixing just until combined.
  • Layer batter and strawberry puree in pan and gently swirl.
  • Bake for 50–60 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Avoid overmixing for the most tender crumb. Use fresh strawberry puree or preserves.
