grated cheese (cheddar, Swiss, or blend)

puff pastry, thawed

Instructions
Preheat oven to 400°F (200°C) and grease a 12-cup muffin pan.
Cut puff pastry into squares and gently press into muffin cups.
Whisk eggs, cream, onion, salt, and pepper. Stir in ham and cheese.
Pour mixture into pastry cups about ¾ full.
Bake 18–22 minutes until puffed and set. Cool slightly before serving.
Notes
Add spinach or mushrooms for a veggie twist. Use pre-cooked bacon instead of ham if desired. Great for make-ahead breakfasts.
