Ingredients

  • 5 large eggs
  • 1 tbsp grated onion
  • 0.5 cup chopped ham
  • 0.5 cup heavy cream
  • 1 cup grated cheese (cheddar, Swiss, or blend)
  • 2-3 sheets puff pastry, thawed
  • to taste salt & pepper

Instructions

  • Preheat oven to 400°F (200°C) and grease a 12-cup muffin pan.
  • Cut puff pastry into squares and gently press into muffin cups.
  • Whisk eggs, cream, onion, salt, and pepper. Stir in ham and cheese.
  • Pour mixture into pastry cups about ¾ full.
  • Bake 18–22 minutes until puffed and set. Cool slightly before serving.

Notes

Add spinach or mushrooms for a veggie twist. Use pre-cooked bacon instead of ham if desired. Great for make-ahead breakfasts.
