Instructions
Pat pork chops dry and season both sides with salt, pepper, paprika, and garlic powder.
Heat oil in a large skillet over medium-high heat. Sear pork chops 3 to 4 minutes per side until golden. Remove and set aside.
Add onion to the same pan and cook until soft. Stir in garlic and cook until fragrant.
Sprinkle flour over onions and stir. Gradually whisk in chicken broth, then add cream, thyme, and butter. Simmer until thickened.
Add potatoes to the gravy and nestle pork chops on top. Spoon gravy over the pork.
Cover and simmer on low for 25 to 30 minutes until potatoes are tender and pork reaches 145°F.
Notes
For best results, use bone-in pork chops and keep the heat low during simmering to prevent drying.
