Ingredients

  • 4 bone-in pork chops
  • 2 lb baby potatoes, halved
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 2 tbsp vegetable or olive oil
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 0.5 cup heavy cream or whole milk

Instructions

  • Pat pork chops dry and season both sides with salt, pepper, paprika, and garlic powder.
  • Heat oil in a large skillet over medium-high heat. Sear pork chops 3 to 4 minutes per side until golden. Remove and set aside.
  • Add onion to the same pan and cook until soft. Stir in garlic and cook until fragrant.
  • Sprinkle flour over onions and stir. Gradually whisk in chicken broth, then add cream, thyme, and butter. Simmer until thickened.
  • Add potatoes to the gravy and nestle pork chops on top. Spoon gravy over the pork.
  • Cover and simmer on low for 25 to 30 minutes until potatoes are tender and pork reaches 145°F.

Notes

For best results, use bone-in pork chops and keep the heat low during simmering to prevent drying.
