Equipment

  • Potato masher

Ingredients

  • 4 cups potatoes, peeled and diced
  • 4 cups whole milk
  • 2 cups sharp cheddar cheese, grated
  • 2 tablespoons butter

Instructions

  • Place diced potatoes in a pot, cover with water, and boil until very soft. Drain.
  • Return potatoes to the pot. Add milk and butter. Heat on low until butter melts.
  • Mash some or all of the potatoes to thicken the soup.
  • Slowly stir in grated cheddar cheese until melted and smooth. Season if desired.

Notes

Mash more potatoes for a thicker soup or leave chunks for texture.
