Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup green beans
  • 1 cup corn kernels
  • 1 can fire-roasted diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste salt and black pepper

Instructions

  • Brown ground beef with onion, carrots, and celery in a large pot over medium heat. Drain excess fat.
  • Add garlic, oregano, and basil. Cook briefly until fragrant.
  • Stir in beef broth and potatoes. Bring to a simmer and cook until potatoes are tender.
  • Add tomatoes, green beans, and corn. Simmer until heated through. Season to taste.
