Ingredients

  • 1 lb breakfast sausage
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 30 oz frozen tater tots
  • 3 cups shredded cheese
  • 10 large eggs
  • 1 1/2 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Brown sausage with onion and bell pepper in a skillet. Drain excess grease.
  • Grease a 9x13-inch baking dish and layer half the tater tots on the bottom.
  • Sprinkle half of the cheese over the tater tots.
  • Whisk eggs, milk, salt, and pepper, then pour evenly over the dish.
  • Add sausage mixture and top with remaining tater tots.
  • Cover and bake at 350°F until mostly set. Uncover, add remaining cheese, and bake until bubbly.

Notes

Assemble the night before for an easy morning bake.
