Instructions
Brown sausage with onion and bell pepper in a skillet. Drain excess grease.
Grease a 9x13-inch baking dish and layer half the tater tots on the bottom.
Sprinkle half of the cheese over the tater tots.
Whisk eggs, milk, salt, and pepper, then pour evenly over the dish.
Add sausage mixture and top with remaining tater tots.
Cover and bake at 350°F until mostly set. Uncover, add remaining cheese, and bake until bubbly.
Notes
Assemble the night before for an easy morning bake.
