Ingredients

  • 3/4 cup butter, melted
  • 2/3 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 eggs
  • 2 1/2 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup powdered sugar (for icing)
  • 2 tbsp fresh lemon juice (for icing)

Instructions

  • Preheat oven to 350°F and grease an 8×8 baking dish.
  • Mix melted butter, granulated sugar, and powdered sugar until smooth. Add eggs one at a time.
  • Stir in lemon zest, lemon juice, vanilla extract, and lemon extract if using.
  • Whisk flour, baking powder, and salt together. Gently fold into wet ingredients.
  • Spread batter evenly into prepared dish and bake for 16–18 minutes.
  • Cool completely. Mix powdered sugar with lemon juice and pour icing over blondies.

Notes

Cool completely before icing for best texture and clean slices.
