russet potatoes, thinly sliced

Instructions
Preheat oven to 375°F (190°C) and grease a baking dish.
Melt butter in a saucepan over medium heat. Stir in flour and cook 1 minute.
Slowly whisk in milk until smooth and thickened. Add garlic, salt, and pepper, then stir in 1 cup cheese.
Layer sliced potatoes in the baking dish and pour cheese sauce evenly over them.
Cover with foil and bake for 45 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for 15–20 minutes.
Let rest 10 minutes before serving.
Notes
Slice potatoes evenly and consider adding onions, bacon, or different cheeses for variation.
