Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.25 cup butter, melted
  • salt, to taste
  • black pepper, to taste

Instructions

  • Spray the crockpot with nonstick spray.
  • Add the diced potatoes to the slow cooker.
  • In a bowl, mix cream of chicken soup, sour cream, melted butter, salt, and pepper.
  • Pour the mixture over the potatoes and stir gently to coat evenly.
  • Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until potatoes are tender.
  • Stir in shredded cheddar cheese during the last 30 minutes until melted.

Notes

Stir once halfway through cooking for even creaminess. Add bacon bits or green onions for extra flavor.
