Ingredients

  • 1 lb ground beef
  • 1 medium head green cabbage, thinly sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • 1 tsp smoked paprika (optional)
  • salt and black pepper to taste

Instructions

  • Preheat oven to 375°F and lightly grease a large baking dish.
  • Heat olive oil in a skillet over medium heat and cook onion until soft.
  • Add ground beef and cook until browned, breaking it apart.
  • Stir in garlic, seasonings, salt, and pepper and cook briefly.
  • Combine beef mixture with cabbage, rice, tomatoes, and broth.
  • Transfer to baking dish, cover tightly with foil, and bake 45–50 minutes.
  • Remove foil for last 10 minutes if desired. Rest before serving.

Notes

Let the casserole rest before serving to allow the rice to set and flavors to deepen.
