leftover mashed potatoes, cooled

shredded cheese (cheddar or mozzarella)

breadcrumbs

grated Parmesan cheese

salt and pepper to taste
Instructions
Preheat oven to 425°F (220°C) or air fryer to 375°F (190°C).
In a bowl, mix mashed potatoes, cheese, egg, breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper until combined.
Scoop small portions and roll into evenly sized balls.
Place on a lined baking sheet or air fryer basket, spacing slightly apart.
Bake 18–22 minutes or air fry 10–12 minutes until golden and crispy. Serve warm.
Notes
Bake or air fry for a lighter, crispy result. Best served warm.
