Ingredients

  • 2 cups leftover mashed potatoes, cooled
  • 0.5 cup shredded cheese (cheddar or mozzarella)
  • 1 egg
  • 0.25 cup breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste

Instructions

  • Preheat oven to 425°F (220°C) or air fryer to 375°F (190°C).
  • In a bowl, mix mashed potatoes, cheese, egg, breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper until combined.
  • Scoop small portions and roll into evenly sized balls.
  • Place on a lined baking sheet or air fryer basket, spacing slightly apart.
  • Bake 18–22 minutes or air fry 10–12 minutes until golden and crispy. Serve warm.

Notes

Bake or air fry for a lighter, crispy result. Best served warm.
