Ingredients

  • 4 medium russet or Yukon Gold potatoes, scrubbed and cubed
  • 2 tbsp olive oil
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Cut potatoes into 1-inch cubes and toss with olive oil until evenly coated.
  • In a bowl, mix Parmesan, garlic powder, paprika, onion powder, salt, pepper, and red pepper flakes. Toss potatoes in seasoning until coated.
  • Spread potatoes in a single layer on the baking sheet. Bake for 30–35 minutes, flipping halfway, until golden and crispy.
  • Garnish with chopped parsley and serve hot.

Notes

For extra crispiness, broil for 2–3 minutes at the end. Serve with garlic aioli, sour cream, or marinara.
