Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Cut potatoes into 1-inch cubes and toss with olive oil until evenly coated.
In a bowl, mix Parmesan, garlic powder, paprika, onion powder, salt, pepper, and red pepper flakes. Toss potatoes in seasoning until coated.
Spread potatoes in a single layer on the baking sheet. Bake for 30–35 minutes, flipping halfway, until golden and crispy.
Garnish with chopped parsley and serve hot.
Notes
For extra crispiness, broil for 2–3 minutes at the end. Serve with garlic aioli, sour cream, or marinara.
