Ingredients

  • 1.5 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1.25 cups milk
  • 2 tablespoons melted butter or oil
  • 1 orange orange zest
  • 0.25 cup fresh orange juice
  • 1 teaspoon vanilla extract

Instructions

  • Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
  • In another bowl, whisk eggs, milk, melted butter, orange zest, orange juice, and vanilla.
  • Pour wet ingredients into dry ingredients and stir gently until just combined.
  • Heat a lightly greased skillet or griddle over medium heat.
  • Pour about 1/4 cup of batter per pancake onto the hot surface.
  • Cook until bubbles form on top, flip, and cook until golden brown.

Notes

Do not overmix the batter to keep pancakes light and fluffy.
