Ingredients

  • 1 head iceberg lettuce, chopped
  • 1/2 red onion finely chopped
  • 4-5 hard-boiled eggs, chopped
  • 5 sweet peppers, diced
  • 2 12 oz bags frozen peas, thawed
  • 1 1/2 cups aged Irish cheese, shredded or diced
  • 3/4 cup mayonnaise
  • 1/2 cup sweet relish
  • 1 tbsp spicy mustard
  • 1 tsp dried thyme
  • 2 tsp salt

Instructions

  • Mix mayonnaise, sweet relish, spicy mustard, dried thyme, and salt until smooth.
  • Chop lettuce, onion, eggs, and peppers.
  • Thaw and drain peas.
  • Layer lettuce, red onion, eggs, peppers, peas, and cheese in a large glass bowl.
  • Spread dressing evenly over the top.
  • Refrigerate until serving.
  • Toss the salad right before serving.

Notes

Keep the dressing on top until serving to maintain the layered presentation.
