Ingredients

  • 3 cups cooked chicken breasts, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup celery, finely chopped
  • 1/4 cup green onions, chopped
  • 1 tbsp Dijon mustard
  • salt and black pepper, to taste
  • 6 croissants, halved

Instructions

  • Boil or poach chicken breasts for 15–20 minutes until fully cooked. Let cool, then shred.
  • In a bowl, mix mayonnaise, Dijon mustard, salt, and pepper until smooth.
  • Add shredded chicken, celery, and green onions. Stir until evenly coated.
  • Slice croissants horizontally. Spoon chicken salad onto the bottom halves and replace tops.
  • Serve immediately or refrigerate in an airtight container for up to 2 days.

Notes

For best results, assemble croissants close to serving time to prevent sogginess.
