cooked chicken breasts, shredded

Instructions
Boil or poach chicken breasts for 15–20 minutes until fully cooked. Let cool, then shred.
In a bowl, mix mayonnaise, Dijon mustard, salt, and pepper until smooth.
Add shredded chicken, celery, and green onions. Stir until evenly coated.
Slice croissants horizontally. Spoon chicken salad onto the bottom halves and replace tops.
Serve immediately or refrigerate in an airtight container for up to 2 days.
Notes
For best results, assemble croissants close to serving time to prevent sogginess.
