Ingredients

  • 4 cups mixed salad greens
  • 1 can mandarin oranges, drained
  • 0.25 cup sliced almonds or walnuts
  • 0.25 cup dried cranberries or raisins
  • 0.25 cup shredded cheese
  • 3 tbsp olive oil
  • 1 tbsp orange juice
  • 1 tbsp lemon juice or vinegar
  • 1 tsp honey
  • salt and pepper to taste

Instructions

  • Place the salad greens in a large bowl.
  • Add mandarin oranges, nuts, dried fruit, and cheese if using.
  • Whisk olive oil, orange juice, lemon juice, honey, salt, and pepper in a small bowl.
  • Pour the dressing over the salad and toss gently.
  • Serve immediately while fresh.
