Ingredients

  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup sour cream or yogurt
  • 1 cup powdered sugar
  • 2 tbsp pineapple juice
  • 1 tsp vanilla for glaze

Instructions

  • Preheat oven to 350°F and grease a baking pan.
  • Mix flour, baking powder, baking soda, spices, and salt in a bowl.
  • Beat butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla.
  • Stir in crushed pineapple and sour cream.
  • Gently fold in dry ingredients until combined.
  • Bake for 45–50 minutes until golden and a toothpick comes out clean.
  • Mix glaze ingredients and drizzle over cooled cake.

Notes

You can add shredded coconut or chopped nuts for extra texture if desired.
