Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup uncooked long-grain rice
  • 1 can cream of chicken soup
  • 1 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat the oven to 375°F and lightly grease a baking dish.
  • Combine chicken, rice, soup, broth, salt, and pepper in the baking dish.
  • Stir until evenly mixed, then cover tightly with foil.
  • Bake for 45 minutes, remove foil, add cheese, and bake 10 more minutes.

Notes

This casserole can be prepared ahead and baked when needed. Leftovers reheat well.
