Equipment

Ingredients

  • 300 g spaghetti or pasta of choice
  • 6–8 cloves garlic, peeled and smashed
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1.5 cups heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 tsp black pepper
  • salt to taste
  • fresh parsley or basil (optional)
  • red pepper flakes (optional)

Instructions

  • Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  • Melt butter with olive oil in a skillet over medium heat. Add garlic and cook gently until fragrant and lightly golden.
  • Lower heat and pour in heavy cream. Warm gently for 2–3 minutes, stirring often.
  • Stir in Parmesan cheese until smooth. Season with salt and black pepper.
  • Add pasta to the sauce and toss well. Loosen with reserved pasta water if needed.
  • Serve hot and garnish with herbs or red pepper flakes if desired.

Notes

Use fresh garlic and gently cook it to avoid bitterness. Adjust sauce thickness with reserved pasta water.
