Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cup brown sugar
  • 0.5 cup honey
  • 1 large egg
  • 0.5 cup ground almonds or chopped nuts
  • 0.5 cup candied fruit or raisins
  • 1 tablespoon orange zest
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ground cloves or allspice
  • 1 teaspoon baking powder
  • 1 pinch salt

Instructions

  • Preheat oven to 350°F and line an 8×8-inch pan.
  • Mix honey, brown sugar, egg, and orange zest until smooth.
  • Stir in flour, spices, baking powder, salt, nuts, and fruit until combined.
  • Spread batter evenly in the prepared pan.
  • Bake 25–30 minutes until set, then cool before slicing.

Cool completely before slicing for clean edges.
