Ingredients

  • 1.5 lb ground beef or beef and pork mixture
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 0.5 cup milk
  • 2 large eggs
  • 0.25 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme or Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated carrot or zucchini (optional)
  • 0.5 cup ketchup (for glaze)
  • 2 tbsp brown sugar
  • 1 tbsp Dijon or yellow mustard (for glaze)
  • 1 tsp Worcestershire sauce (for glaze)

Instructions

  • Preheat oven to 350°F and line a baking sheet or grease a loaf pan.
  • Combine milk, eggs, ketchup, Worcestershire sauce, mustard, onion, garlic, and seasonings in a bowl.
  • Add breadcrumbs, vegetables if using, and ground meat. Mix gently until just combined.
  • Shape into a loaf and place in pan or on baking sheet.
  • Mix glaze ingredients and spread half over the meatloaf. Bake 45–55 minutes.
  • Spread remaining glaze on top during last 10 minutes. Rest 10 minutes before slicing.

Mix gently and let the meatloaf rest before slicing for best results.
