Ingredients

  • 2.5 lb bone-in chicken thighs or breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 14.5 oz low-sodium chicken broth
  • 2 tbsp all-purpose flour or cornstarch
  • 2 tbsp butter
  • 0.5 tsp dried thyme

Instructions

  • Season chicken with salt, pepper, garlic powder, and onion powder. Sear in olive oil if desired.
  • Place onion and garlic in the slow cooker. Add chicken and pour in broth. Sprinkle with thyme.
  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
  • Remove chicken. Thicken cooking liquid with butter and flour or cornstarch slurry.
  • Shred chicken, return to gravy, and serve warm.

Notes

Bone-in chicken adds the best flavor. Remove skin and bones before serving if desired.
