yellow onion, sliced

all-purpose flour or cornstarch

Instructions
Season chicken with salt, pepper, garlic powder, and onion powder. Sear in olive oil if desired.
Place onion and garlic in the slow cooker. Add chicken and pour in broth. Sprinkle with thyme.
Cook on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
Remove chicken. Thicken cooking liquid with butter and flour or cornstarch slurry.
Shred chicken, return to gravy, and serve warm.
Notes
Bone-in chicken adds the best flavor. Remove skin and bones before serving if desired.
