Ingredients

  • 2 lb potatoes, peeled and quartered
  • 1.5 cups milk, warmed
  • 0.25 cup unsalted butter
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1.25 cups beef broth
  • 0.5 tsp curry powder
  • 1 cup frozen peas and carrots

Instructions

  • Boil potatoes in salted water until fork-tender. Drain well.
  • Mash potatoes with warm milk, butter, salt, and pepper until fluffy.
  • Brown ground beef in a skillet and drain excess fat.
  • Add onion and cook until softened. Stir in garlic briefly.
  • Sprinkle flour over beef, then slowly add broth while stirring.
  • Simmer until thick, season, and fold in peas and carrots.

Notes

Warm the milk before mashing for extra fluffy potatoes.
