Ingredients

  • 4 cups crumbled unsweetened cornbread
  • 1 lb breakfast sausage
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2.5 cups chicken broth
  • 2 large eggs, beaten
  • 1 tsp dried sage
  • salt and black pepper, to taste

Instructions

  • Preheat oven to 375°F and grease a baking dish.
  • Brown sausage in a skillet. Add onion and celery and cook until softened.
  • Combine cornbread, sausage mixture, sage, salt, and pepper in a large bowl.
  • Stir in eggs and enough broth to create a moist mixture.
  • Transfer to baking dish and bake 40–45 minutes until golden and set.

Notes

Use unsweetened cornbread for authentic flavor. Moist but not soupy is the key.
