Ingredients

  • 2 lbs chicken pieces (breasts, thighs, or mix)
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil or butter
  • 1.5 cups chicken broth
  • salt and pepper to taste
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 1 tablespoon lemon juice or lemon slices (optional)

Instructions

  • Season chicken with salt, pepper, and a little minced garlic.
  • Heat oil or butter in a skillet and sear chicken until golden on both sides.
  • Remove chicken briefly. Add onion and sauté until fragrant.
  • Pour in chicken broth, scraping up browned bits.
  • Return chicken to skillet. Add herbs and lemon if using. Cover and simmer until tender.
  • Serve chicken with sauce spooned over the top.
