Ingredients

  • 1 pound chicken breasts or tenders
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4–1 cup cold water
  • oil for frying

Instructions

  • Heat oil in a deep pan to 350°F.
  • Whisk flour, cornstarch, salt, and baking powder in a bowl.
  • Stir in cold water until a thin, smooth batter forms.
  • Dip chicken into batter, letting excess drip off.
  • Fry chicken for 4–6 minutes until golden and crispy.
  • Remove and drain on paper towels. Serve hot.

Notes

Keep batter cold for the best crunch and fry in small batches.
