Ingredients

  • 1.5 cups mashed cooked sweet potato
  • 2 large eggs (or flax eggs)
  • 0.33 cup maple syrup or honey
  • 0.33 cup olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 0.5 cup oat flour (certified gluten-free)
  • 1.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt

Instructions

  • Preheat oven to 350°F and grease an 8-inch round pan or loaf pan.
  • Whisk mashed sweet potato, eggs, maple syrup, oil, and vanilla until smooth.
  • Stir in almond flour, oat flour, baking powder, cinnamon, nutmeg, and salt until just combined.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 35–40 minutes until a toothpick inserted comes out clean.
  • Cool for 10–15 minutes before slicing and serving.

Notes

Roasting sweet potatoes before mashing adds deeper flavor.
