Ingredients

  • 2 cups cooked chicken, finely chopped or shredded
  • 1 cup shredded cheese
  • 0.5 cup breadcrumbs
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • oil for frying
  • optional fresh herbs (parsley or chives)

Instructions

  • Combine chicken and shredded cheese in a large bowl.
  • Stir in breadcrumbs, eggs, flour, and seasonings until the mixture holds together.
  • Shape the mixture into small patties or balls.
  • Heat oil in a skillet over medium heat.
  • Fry fritters 2 to 3 minutes per side until golden and crisp.
  • Drain on paper towels and serve warm.

Notes

Use mozzarella for extra cheese pull. The batter can be refrigerated before cooking for firmer fritters.
