Instructions
Combine chicken and shredded cheese in a large bowl.
Stir in breadcrumbs, eggs, flour, and seasonings until the mixture holds together.
Shape the mixture into small patties or balls.
Heat oil in a skillet over medium heat.
Fry fritters 2 to 3 minutes per side until golden and crisp.
Drain on paper towels and serve warm.
Notes
Use mozzarella for extra cheese pull. The batter can be refrigerated before cooking for firmer fritters.
