Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups bell peppers, sliced
  • 1 large onion, sliced
  • 2 tbsp fajita or taco seasoning
  • 2 cups shredded cheese
  • 2 cups cooked rice or torn tortillas (optional)
  • 1 cup optional add-ins (black beans, corn, or salsa)

Instructions

  • Preheat oven to 375°F and grease a casserole dish.
  • Toss chicken, peppers, onions, and seasoning in a bowl.
  • Spread rice or tortillas in the dish if using.
  • Add the chicken mixture evenly over the base.
  • Sprinkle shredded cheese over the top.
  • Bake until hot and bubbly and cheese is melted.
  • Cool briefly before serving.

Notes

Use cooked chicken for faster prep. Rice or tortillas are optional but add heartiness.
