fajita or taco seasoning

cooked rice or torn tortillas (optional)

optional add-ins (black beans, corn, or salsa)
Instructions
Preheat oven to 375°F and grease a casserole dish.
Toss chicken, peppers, onions, and seasoning in a bowl.
Spread rice or tortillas in the dish if using.
Add the chicken mixture evenly over the base.
Sprinkle shredded cheese over the top.
Bake until hot and bubbly and cheese is melted.
Cool briefly before serving.
Notes
Use cooked chicken for faster prep. Rice or tortillas are optional but add heartiness.
