Ingredients

  • 4 cups fresh broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tbsp butter
  • 0.25 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 cups milk or cream
  • 2 cups sharp cheddar cheese, shredded
  • salt and pepper to taste

Instructions

  • Melt butter in a large pot and sauté onion and garlic until soft.
  • Stir in flour and cook briefly to form a roux.
  • Gradually whisk in broth until smooth.
  • Add broccoli and simmer until tender.
  • Stir in milk or cream and heat gently.
  • Remove from heat and stir in cheddar cheese until melted.
  • Season with salt and pepper and serve warm.

Notes

For the smoothest texture, add cheese off the heat and stir gently until melted.
