sharp cheddar cheese, shredded
salt and pepper to taste
Instructions
Melt butter in a large pot and sauté onion and garlic until soft.
Stir in flour and cook briefly to form a roux.
Gradually whisk in broth until smooth.
Add broccoli and simmer until tender.
Stir in milk or cream and heat gently.
Remove from heat and stir in cheddar cheese until melted.
Season with salt and pepper and serve warm.
Notes
For the smoothest texture, add cheese off the heat and stir gently until melted.
