Instructions
Preheat oven to 350°F and grease a pie dish.
Whisk eggs and sugar together until smooth.
Whisk in milk or cream and vanilla extract.
Stir in shredded coconut, salt, and lemon zest if using.
Pour mixture into prepared pie dish.
Bake until set and lightly golden on top.
Cool slightly before slicing and serving.
Notes
Serve warm or chilled. Optional lemon zest adds brightness without overpowering the coconut.
