Ingredients

  • 3 cups mashed potatoes, cooled
  • 1.5 cups shredded cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp green onions, finely chopped
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups breadcrumbs
  • 2 large eggs, beaten
  • oil for frying

Instructions

  • Mix mashed potatoes, cheeses, green onions, garlic powder, salt, and pepper until combined.
  • Roll mixture into evenly sized balls.
  • Dip balls in beaten egg, then coat in breadcrumbs.
  • Fry in hot oil until golden and crispy.
  • Drain briefly and serve warm with dipping sauces.

Notes

For extra gooey centers, add a small cube of cheese inside each ball.
