Ingredients

  • 1.75 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups cherries, pitted and halved
  • 0.75 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp almond extract (optional)

Instructions

  • Preheat oven to 350°F and line an 8×8-inch pan with parchment paper.
  • Mix flour, sugar, baking powder, salt, butter, egg, and vanilla to form a soft dough. Press into pan.
  • Toss cherries with sugar, lemon juice, cornstarch, and almond extract, then spread over crust.
  • Add crumble topping if using and bake until golden and bubbling.
  • Cool completely before lifting out and slicing into bars.

Notes

Allow bars to cool completely before slicing for clean edges.
