Instructions
Preheat oven to 350°F and line an 8×8-inch pan with parchment paper.
Mix flour, sugar, baking powder, salt, butter, egg, and vanilla to form a soft dough. Press into pan.
Toss cherries with sugar, lemon juice, cornstarch, and almond extract, then spread over crust.
Add crumble topping if using and bake until golden and bubbling.
Cool completely before lifting out and slicing into bars.
Notes
Allow bars to cool completely before slicing for clean edges.
