Ingredients

  • 2 cups pecans, finely chopped
  • 1 cup graham cracker crumbs
  • 0.5 cup brown sugar, packed
  • 0.5 cup corn syrup or honey or maple syrup
  • 0.25 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • pinch of salt
  • 10 oz chocolate, melted (optional)

Instructions

  • Mix chopped pecans, graham cracker crumbs, brown sugar, and cinnamon in a bowl.
  • Whisk melted butter, syrup, vanilla, and salt, then stir into the dry mixture.
  • Roll the mixture into tablespoon-sized balls and place on a parchment-lined tray.
  • Chill for 30–45 minutes until firm.
  • Dip in melted chocolate if desired and chill again until set.

Notes

Chilling improves both texture and flavor. These taste even better the next day.
