Ingredients

  • 2 large eggs
  • 0.75 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1.5 cups fresh or frozen blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk or heavy cream
  • 0.5 teaspoon pure vanilla extract (glaze)
  • lemon zest (optional)

Instructions

  • Preheat oven to 375°F and prepare a mini muffin tin.
  • Whisk dry ingredients together in a large bowl.
  • Whisk eggs, milk, butter, and vanilla in a separate bowl.
  • Combine wet and dry ingredients gently, then fold in blueberries.
  • Fill muffin cups and bake 15–18 minutes until golden.
  • Prepare glaze, drizzle over cooled fritter bites, and let set.

Notes

Do not overmix the batter for the most tender texture.
