  • 2 cups cooked and mashed sweet potatoes

  • 2 large eggs

  • 0.25 teaspoon black pepper
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano

Instructions

  • Prepare sweet potato batter and spread evenly on a parchment-lined baking sheet.
  • Bake at 375°F until set and lightly golden, then cool slightly.
  • Cook minced meat with onion, garlic, and seasonings until browned.
  • Spread filling over the base, roll carefully, and place seam-side down.
  • Bake again until heated through. Rest before slicing.

Notes

Roll the base while warm to prevent cracking.
