Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 2 cups pecan halves or chopped pecans

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment.
  • Cream butter and brown sugar until light and fluffy. Add egg and vanilla.
  • Whisk flour, oats, baking soda, and salt, then add to wet ingredients.
  • Roll dough into balls, place on baking sheet, and press pecans on top.
  • Bake 10–12 minutes until edges are golden. Cool before serving.

Notes

Toast pecans first for deeper flavor.
