Ingredients

  • 4 medium zucchini
  • 0.75 cup grated Parmesan cheese
  • 1 cup breadcrumbs or Panko
  • 2 cloves garlic, minced or garlic powder equivalent
  • 2 large eggs
  • salt and black pepper to taste

Instructions

  • Wash, dry, and cut zucchini into fry-shaped sticks.
  • Beat eggs in one bowl and mix Parmesan, breadcrumbs, garlic, and seasoning in another.
  • Dip zucchini into egg, then coat in Parmesan-breadcrumb mixture.
  • Bake at 425°F for 15–20 minutes, flipping halfway, or air fry at 400°F for 10–12 minutes.

Notes

Pat zucchini dry before coating for best crispiness.
