Ingredients

  • 2 lb potatoes, peeled and grated
  • 1 small onion, grated (optional)
  • 2 large eggs
  • 3 tbsp all-purpose flour
  • salt to taste
  • black pepper to taste
  • vegetable oil for frying

Instructions

  • Grate potatoes and squeeze out excess liquid using a kitchen towel.
  • Mix potatoes with onion, eggs, flour, salt, and pepper until combined.
  • Heat oil in a skillet over medium-high heat.
  • Scoop batter into oil, flatten, and fry until golden brown on both sides.

Notes

Squeeze grated potatoes very dry for best crispiness.
