Instructions
Grate potatoes and squeeze out excess liquid using a kitchen towel.
Mix potatoes with onion, eggs, flour, salt, and pepper until combined.
Heat oil in a skillet over medium-high heat.
Scoop batter into oil, flatten, and fry until golden brown on both sides.
Notes
Squeeze grated potatoes very dry for best crispiness.
