Ingredients

  • 4 large baking potatoes
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 0.5 cup sour cream
  • 2 tbsp fresh chives, chopped

Instructions

  • Preheat oven to 425°F. Scrub potatoes, dry, rub with olive oil, and sprinkle with salt.
  • Bake potatoes for 45–60 minutes until skins are crisp and centers are tender.
  • Slice potatoes lengthwise and fluff insides with a fork.
  • Top with sour cream, chives, and black pepper. Add optional toppings if desired.

Notes

Bake directly on the oven rack for the crispiest skins.
