Instructions
Preheat oven to 425°F. Scrub potatoes, dry, rub with olive oil, and sprinkle with salt.
Bake potatoes for 45–60 minutes until skins are crisp and centers are tender.
Slice potatoes lengthwise and fluff insides with a fork.
Top with sour cream, chives, and black pepper. Add optional toppings if desired.
Notes
Bake directly on the oven rack for the crispiest skins.
