Ingredients

  • 1 lb ground sausage
  • 1 small onion, diced
  • 1 medium green bell pepper, diced (optional)
  • 3 cloves garlic, minced
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional)
  • 1 9-inch pie crust

Instructions

  • Preheat oven to 375°F.
  • Cook sausage with onion and bell pepper until browned. Add garlic and cook briefly. Drain.
  • Whisk eggs, milk, salt, pepper, and paprika.
  • Spread sausage in pie crust and top with cheeses.
  • Pour egg mixture evenly over filling.
  • Bake 35–45 minutes until center is set.
  • Cool slightly before slicing and serving.

Notes

Drain sausage well to avoid excess moisture. Let the pie rest before slicing.
