sharp cheddar cheese, shredded and divided

garlic powder

teaspoon
paprika
salt, to taste
black pepper, to taste
Instructions
Preheat oven to 375–400°F (190–200°C).
Cook cauliflower until just tender, then drain well.
Melt butter in a saucepan, whisk in flour, and cook briefly.
Slowly whisk in milk until thick and smooth.
Stir in most of the cheese, garlic powder, paprika, salt, and pepper until smooth.
Combine cauliflower with cheese sauce and spread into a baking dish.
Top with remaining cheese and bake until golden and bubbly.
Notes
Drain cauliflower well to prevent excess moisture.
