Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 2 cups sharp cheddar cheese, shredded and divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • salt, to taste
  • black pepper, to taste

Instructions

  • Preheat oven to 375–400°F (190–200°C).
  • Cook cauliflower until just tender, then drain well.
  • Melt butter in a saucepan, whisk in flour, and cook briefly.
  • Slowly whisk in milk until thick and smooth.
  • Stir in most of the cheese, garlic powder, paprika, salt, and pepper until smooth.
  • Combine cauliflower with cheese sauce and spread into a baking dish.
  • Top with remaining cheese and bake until golden and bubbly.

Notes

Drain cauliflower well to prevent excess moisture.
