Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins or chocolate chips or nuts

Instructions

  • Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  • Mix oats, flour, baking soda, baking powder, cinnamon, and salt in a bowl.
  • Cream butter with brown sugar and granulated sugar until light and fluffy.
  • Beat in egg and vanilla extract until combined.
  • Gradually mix dry ingredients into wet ingredients until just combined.
  • Fold in desired mix-ins.
  • Scoop dough onto baking sheet and bake for 10–12 minutes.
  • Cool briefly, then transfer to a wire rack to cool completely.

Notes

For chewier cookies, chill dough for 30 minutes before baking.
